What does Pure mean when it comes to edible oil?One truth is, it can mean almost anything. It can be most natural oil possible, cold pressed from ripe fruit and bottled or it can be highly refined oil, one thats been subjected to heat  and  solvent extraction, filtering, distilling, degumming, bleaching and heat deodorization steps. Some people may find natural crude oil as highly flavourable but such oil has following drawbacks as well : The naturally occurring polyunsaturates, free fatty acids and gums cause rancidity and opaqueness in the product

• Due to above compounds, the oil bears other flavors
• Oil is more viscous, thus susceptible to easy oxidation
• Oil easily decompose at slightly higher temperature imparting unpleasant odor
• Polyunsaturates are easily oxidized

Thus, at A.N.V Foods Pvt Ltd complete refining process is being undertaken which is essential to remove even a trace of impurities like phosphatides, free fatty acids, pigments, off-flavor and others from so called pure and natural oil. These Processes Are As Follows

• Degumming : Phosphatides have strong emulsifying action and are thermally unstable, and thus these are to be removed as a first step to avoid undue darkening of oil due to their decomposition. Water degumming process is being employed here. After the reaction period of oil & water, the hydrated phosphatides are separated by decantation. Our special almonds possess only 0.01% phosphatides, thus there is no need of chemical degumming and subsequent trace of chemical in final product ruled out.
• Neutralization : Free fatty acids, pigments and waxes in the natural oil promote oxidation leading to undesirable color and odor in the final product. These impurities are removed by treating the oil with caustic soda (sodium hydroxide). The impurities settle at soap and drawn - off. The oil so neutralized is less viscous, and thus less susceptible to oxidation. Also, the oil is clear.
• Bleaching : The impurities such as chlorophyll and carotenoids impart fast color to the oil which is removed by heating the oil with fullers earth and activated carbon. The oil, thus obtained is lighter in color. Bleached oil filtered through specialized fabric filter.
