Definition of inulin:
Inulin is a linear linear polysaccharide linked by beta; -(2rarr; 1) bond of fructose, often with a glucose at the end, and the degree of polymerization (DP) is usually 2-60.
Inulin is actually a mixture of fructose with different degrees of polymerization. Fructose with low degree of polymerization (DP=2-9) is usually called fructooligosaccharide, fructose with degree of polymerization of 10-30 is usually called fructopolysaccharide, and fructose with degree of polymerization higher than 40 is usually called fructooligosaccharide.
