Cold Pressed Coconut Oil

The brown, hairy fruit of the coconut palm tree, coconut has a hard shell covering the white nutmeat inside, which is very rich in fat. Some coconut oil products are labeled "cold pressed." During cold pressing, the oil from the coconut meat is mechanically pressed at temperatures not exceeding 120 degrees Fahrenheit, to preserve its healthful benefits. Pure cold-pressed coconut oil is also not refined, processed or deodorized. Coconut oil has been found to be effective in weight loss and cardiovascular disease, and as an antimicrobial agent, among its many other health benefits.

Weight Loss :
Coconut oil is mainly in the form of medium-chain triglycerides, while most vegetable oils, such as olive oil are in the form of long-chain triglycerides. MCTs are utilized more effectively by the body as an energy source than are LCTs and have less chance of being stored in fatty tissues. In addition, MCTs increase the body's metabolic rate and promote fat loss. In a study published in the March 2008 issue of the “American Journal of Clinical Nutrition, ” 31 overweight men and women, aged 19 to 50 years, were given 18 to 24 grams per day of either MCT oil or olive oil for 16 weeks. The MCT consumption resulted in about 1.7 kilograms more fat loss than olive oil. A study published in the July 2009 issue of “Lipids” found that 12 weeks of coconut oil consumption in women promoted significantly more fat loss in the abdominal area, compared to soybean oil.

Cardiovascular Disease :
A study published in the January 2012 issue of the “Asia Pacific Journal of Clinical Nutrition" looked at whether coconut oil would have a beneficial effect on lipid levels in 1, 839 Filipino women, aged 35 to 69 years. The results indicated that coconut oil intake significantly increased the levels of HDL, the beneficial cholesterol, while it had little effect on the levels of LDL, the harmful cholesterol. Another study that appeared in the November 2003 issue of “The Journal of Nutrition" found that coconut oil rich diet lowered the levels of blood fibrinogen and lipoprotein(a), the markers of heart attack risk.

Antimicrobial Properties :
About 50 percent of the MCTs in coconut oil is lauric acid. The body converts lauric acid into monolaurin, a compound with potent antimicrobial properties. Monolaurin is effective against herpes, influenza, measles, AIDS and several other viruses. It also kills a number of bacteria, such as Helicobacter pylori, the causative factor in stomach ulcers. Moreover, monolaurin destroys a variety of fungi, yeast and protozoa, such as some types of ringworm, Candida albicans and Giardia lamblia. Research has shown that lauric acid's strong antimicrobial activity is due to its ability to destroy the protective fatty membranes surrounding these microorganisms.

Safety :
A study published in the March 2011 issue of “ISRN Phamacology” found coconut oil consumption to be safe for healthy humans. Individuals with diabetes and liver disease should be cautious when using MCTs, however, and talk to their physicians before using it, since its use can lead to a buildup of harmful acids in the body, resulting in nausea, vomiting and even coma.

Cold Pressed Groundnut Oil

Conventional oil extraction :
The modern method of oil extraction involves supplying a lot of heat. The oilseed is first crushed, and the pulp is heated under pressure. As a result, almost all the oil is extracted. The downside is that the oil is heated up to temperatures of 230 degree centigrade. Heating it to such high temperatures alters the properties of the oil molecules in unfavourable ways (Polycyclic Aromatic Hydrocarbons  are formed at high temperatures which are carcinogenic) – and strips it off of its nutritional value.

For optimum extraction of oil, a solvent is added, in this case, hexane. The hazards of exposure to hexane are many – including dermatitis and CNS depression – depending upon the quantity of hexane inhaled or ingested. The other option of extraction is using a method called “Expeller pressing“, which is a mechanical process of extraction using a machine called an expeller. No heat is added to the process, but heat can be produced as a result of the mechanical action on the nut – which could very well result in high temperatures that alter the chemical composition of the oil.

The case for cold pressed oils :
In olden times, a long cylindrical contraption called a “ghani” was used. The oilseeds were placed inside and ground with a pestle until the oil came out. This is the simplest method for “cold-pressing” the oil out of a seed because it doesn’t involve the generation or addition of heat. The residue or the oil cake was used as fodder for cattle. Today cold-pressed methods of extraction are the same as the expeller-pressed method, albeit in a temperature-controlled setting. According to the European Union regulations, the temperatures for cold-pressing must not exceed 27 degrees centigrade, though such criteria in India have not been established.

  • They retain healthy anti-oxidants that are otherwise destroyed by heat. These anti-oxidants fight harmful free radicals and prevent the growth of tumors.
  • Cold pressed olive oil is rich in Vitamin E, which has anti-inflammatory, healing properties. It is a good source of oleic acid which strengthens the immune system.

Cold Pressed Gingelly Oil

Sesame oil, also known as gingelly or til oil, is obtained from sesame seeds. It plays a prominent role in Asian cuisine and also alternative medicine. Oil is expressed from sesame seeds either by simply crushing or toasting over heat. The first method provides cold-pressed sesame oil. While cold-pressed sesame oil is pale yellow, hot-processed sesame oils have darker shades and markedly different flavor. Apart from the mild, nutty flavor of cold-pressed sesame oil, it contains a higher proportion of fatty acids than sesame oil obtained from heated seeds. In addition, the sesamolin content of cold-pressed sesame oil protects it from oxidation and, therefore, increases its shelf-life.

Nutrients :
Cold-pressed sesame oil is a good source of vitamin E, containing 11.8 mg of the vitamin for every 100 g of the oil. Vitamin E gives sesame oil its antioxidant property. It also has a high concentration of fatty acids, including polyunsaturated omega-6 fatty acids and monounsaturated omega-9 fatty acids. Other constituents of cold-pressed sesame oil include zinc, copper, magnesium, calcium and iron as well as vitamin B-6. Zinc contributes to healthy bones; copper is good for the management of rheumatoid arthritis; calcium is essential for the prevention of osteoporosis, migraine and colon cancer; and magnesium contributes to respiratory health.

Cardiovascular Benefits :
The high concentration of polyunsaturated fatty acids in cold-pressed sesame oil makes it useful in the control of hypertension. These fatty acids are not the only constituents of the oil helpful in reducing blood pressure. One of the natural preservatives present in the cold-pressed sesame oil, sesamin, is a lignan shown to lower blood pressure. Furthermore, sesamin inhibits the production and absorption of cholesterol and, therefore, contributes to overall cardiac health.

Cosmetic Benefits :
Cold-pressed sesame oil is known in Ayurvedic practice as the healing oil. When applied topically to the skin or hair, its antibacterial, antiviral and anti-inflammatory properties provide protective, nourishing and detoxifying effects on stressed and damaged skin.

The high concentration of omega-6 fatty acids in cold-pressed sesame oil makes it a moisturizing and an ideal massage oil. Sesame oil also rejuvenates the skin and prevents premature aging. It is especially useful for dry and damaged skins as well as in the treatment of sunburn, skin allergies, chemical burns, eczema, rosacea, dry hair and dandruff. It also provides a benefit for patients undergoing chemotherapy and those sensitive to swimming pool chlorine.

Culinary Benefits :
Cold-pressed sesame oil keeps the longest among cooking oils with high smoke points. This is due to preservative actions of sesamin and sesamol naturally present in it. These preservatives make it possible to keep sesame oil from going rancid even while it is stored in the open. Unlike the darker sesame oil obtained from roasted sesame seeds, cold-pressed sesame oil has a higher smoke point and can be used for deep-frying. Even then it should be heated carefully to preserves its mild, nutty flavor and maintain its concentration of vitamin E and unsaturated fatty acids.

In olden times, a long cylindrical contraption called a ghani was used. The oilseeds were placed inside and ground with a pestle until the oil came out. This is the simplest method for cold-pressing the oil out of a seed because it doesnt involve the generation or addition of heat.
