Pumpkin seeds are a great health food with a wide variety of nutrients ranging from magnesium and manganese to copper, protein and zinc, and healthy Omega-3 fats and high dietary fiber. They are also rich in phytosterols and antioxidants. They make an excellent snack and don't need refigeration.
