Mentha(also known asmint, fromGreekmntha, [2]Linear Bmi-ta)[3]is a genus of plants in thefamilyLamiaceae(mint family).[4]It is estimated that 13 to 18 species exist, and the exact distinction between species is still unclear.[5]Hybridizationbetween some of the species occurnaturally. The genus has asubcosmopolitandistribution across Europe, Africa, Asia, Australia, and North America.[6]

Mints are aromatic, almost exclusivelyperennial, rarelyannualherbs. They have wide-spreading underground and overgroundstolons[7]and erect, square, [8]branched stems. Theleavesare arranged inoppositepairs, fromoblongtolanceolate, often downy, and with aserratedmargin. Leaf colors range from dark green and gray-green to purple, blue, and sometimes pale yellow.[6]Theflowersare white to purple and produced in false whorls called verticillasters. The corolla is two-lipped with four subequal lobes, the upper lobe usually the largest. Thefruitis a nutlet, containing one to fourseeds.

While the species that make up theMenthagenus are widely distributed and can be found in many environments, most grow best in wet environments and moist soils. Mints will grow 10120cm tall and can spread over an indeterminate area.

1. Mix the ingredients in a bowl very well and then put over a medium fire.


2. Mix the ingredients with a wooden spoon continuously so that the milk does not crumble.


3. When the mixture begins to boil, keep it for five minutes and then take it off the fire and pour it over a wide pan.


4. After two minutes remove the cream that has been created on the surface and put it aside.


5. Keep on doing this each time a cream is found on the surface until there is nothing left.

Two of my favorite spices, nutmeg and mace, are used a lot in Indian cooking. Mace is the dark-red outer covering of the nutmeg. Fresh nutmeg is processed by removing the pulpy outside and sliding off the mace. It has a tough outer covering that needs to be cracked off before grating.

When dried, mace turns golden-orange and adds hints of warm flavor. Once nutmeg is dried, it lasts pretty much forever, so it is best to buy it whole and grate as required into your dishes. I rarely ever use ground nutmeg, as it is one of those spices whose flavor degrades very fast once it is ground.
