black cumin seeds are the small black granules found in the fruits of nigella sativa plant which is an annual herbaceous plant which belongs to the ranunculaceae family. This is native plant of south west asia that is abundantly cultivated in india, bangladesh, turkey and other eastern countries.
Black seeds are rich sources of calcium, iron, sodium and potassium. Required in small amounts of body, these elements help to strengthen immune system, promote lactation and thus give the oil therapeutic uses as anti-histamine, anti-pyretic, anti-inflammatory, antioxidant, anti-tumor and anti-bacterial.
The black seeds have been traditionally used for centuries in the middle and far east countries to treat various health problems like bronchial asthma, bronchitis, rheumatism, inflammatory diseases, digestion problems, to increase milk production in nursing mothers, to support the body’s immune system and to fight parasitic infestation. The kalonji oil or black seed oil has been used to treat skin conditions such as eczema, boils and to treat cold symptoms.
In food main application area of nigella lies in turkey, libanon and iran especially in bread preparation. From iran, nigella has stepped into northern india where it is used for vegetable dishes. It is fried or dry-roasted before usage to enhance the taste. In the states of west bengal and sikkim it is used in the preparation of panch phoron, a spicy mixture used to flavor meat dishes.
