Being natural, Kashmir Almonds come in different shapes, sizes, and colours; Its intresting to note that each tree produces its own varierty of Almonds. Some are small, some are large and they even differ in colour. Mostly they taste same but there is sometimes a slight difference in the oil content among the varieties of Kashmir Almonds and as such some might turn out to be sweeter than the others. But essentially, all Kashmir Almonds Have Natural Oil in Them. And as a quality standard Almonds from each single tree are kept seperate and sold without mixing it with Almonds from other tree. They are also reffered to as "One tree Almonds".

Light shade Kashmir Walnut kernel halves. Kernels of soft shell Walnuts, Akhrot. The product is from the new crop and does not have any rancid (bitter) kernel. Lighter the walnuts, the better the Quality and for it to last longer, store it in cool and dry place.

The white acacia tree is very rich in nectar for the bees. The trees are abundant in the forests of Kashmir. The nectar productivity of this plant is tremendous, and it can go up to 1000 kgs per hectare. Its clusters are usually full of nectar, their wonderful tender smell making the surroundings fragrant for about two weeks during its flowering season, in spring. During this period strong colonies of bees gather nectar from far away places and produce this white Acacia Honey.
This honey is also called Eye Honey, for its use in treating the eye infection. This real bee Honey, Acacia Honey, can be applied topically twice a day to the lower conjunctiva (the membrane that covers the front of eye and lines the eyelids from inside) and is very effective in treating the eye infection. Figs grow on the Ficus tree (Ficus carica), which is a member of the Mulberry family. Figs richness in vitamin B1makes them beneficial in cases of nerve inflammation. Morels are fungi, and are found in the higher-altitudes of Kashmir valley (and regions of Central Himalaya) and it is locally known as "Guchhi". With the onset of spring, Morels start appearing in the woods of Kashmir valley. These are collected and dried and are an economically important wild species. It is impossible to explain the magic of Morels which leaves thousands of people, in April and May with an obsession of finding them in the woods untill the season is over. Locals travel miles and miles in search of Morels; Hours and hours of walking in mud, spalshing through creek beds, leads people to just a few Morels and when they are dried they make just a few grams! It takes a lot of work to collect a kilo of Dried Morels and from about 12-15 kilos we get a kilo of DRIED JUMBO MORELS!
Morels are an expensive product because of its rich nutritional value coupled with a unique flavour. Morel metabolites are also used as adaptogens and immunostimulants, and are now considered to be one of the most useful anti-tumour agents for clinical use. Morels appear in a large scale during the month of March and its collection starts between April and June.

Purple flowered saffron is a wonderful plant to which nature has given fascinating fragrance, pleasant flavour, a beautiful colour, and a host of other qualities. Believed to have been originally native to the Mediterranean Area, with Asia Minor and Iran. Restricted majorly to these three placesin the World -Kashmir, Iran, and Spain - and with Iran as the major producer of Saffron with more than 65% of world's saffron production, saffron stands to be the World's most expensive spice by weight.
Saffron is produced from saffron flowers and each saffron flower has three stigmas, which are the distal ends of the plant's carpel. When the Saffron flowers are picked, the style and stigma are separated and the stigma is cut at a point where it is joint with the style. It is called Mongra / Mogra SAFFRON in India, and the same Saffron is called ZAFRAN-E-SAR-GOL(saffron from the top of the flower) in Iran. Mongra/Mogra Saffron contains ten per cent more pigment in comparison to Lachha Saffron and is the most preferred forms of Saffron both for commercial and household use.
