Graviera is one of the most popular cheeses in Crete island. It is a hard cheese wtih a light yellow color, and a slightly sweet and nutty taste. It is made with sheeps and goats pasteurized milk and you could eat it plain as it is, with bread or combined with some fruits and jams. Graviera is Greeces second most popular cheese after feta. Graviera Naxou is produced in the island of Naxos, in the Cyclades. It is a yellow under-colour cheese with external rind and compact mass with small holes spread around the mass. It is a hard cheese, with a pleasant taste and light aroma. it is made of cows milk. It can be sliced and eaten, fried as saganaki and eaten as a snack, grated and served over pasta dishes.
Ingredients: Cows milk 80% minimum, sheeps and goats milk maximum 20%, traditional rennet.

One of the oldest cheeses of Lemnos Islands. The revitalization of the curd is a characteristic of the production process. The cheese heads are placed in wooden crates with strainer and are left to dry in the shade usually under trees, at a temperature above 22 C.
