"Lactase is an enzyme. Like other enzymes, it is needed for a specific biochemical reaction in the body. The biochemical reaction that involves lactase breaks down lactose, a sugar in milk and milk products. Some peoples bodies do not make enough lactase, so they are not able to digest milk well. These people are said to have lactase deficiency and are called lactose intolerant. They can take supplemental lactase to help them break down lactose and tolerate milk. In these people lactase can prevent symptoms of lactose intolerance including cramps, diarrhea, and gas.

Many health experts think its important to treat lactose intolerance so people can consume milk and milk products. Milk is a major source of calcium, which is needed for strong bones. People who do not get enough milk are more likely than other people to develop weak bones (osteoporosis).

Inulinase enzyme catalyzes the breakdown of Inulin (a prebiotic) which is a polysaccharide called fructan. Inulin is a chain of fructose molecules, and when inulinase hydrolyses it then fructose molecules are released along with glucose and inulooligosaccharide, which are further utilized for different purposes.Prime industrial use:

• Production of bioethanol,
• Production of single-cell protein
• Fructose syrup production

Xylanase breaks the xylan (hemicellulose) polymer which is the second most abundant polymer on the earth, primarily found in all plant's cell walls. Xylanase is a hydrolytic enzyme and because of that, it is used extensively in paper and pulp, food, textile, and animal feed. Xylanase is a good and safe alternative of a toxic chemical used for bleaching of the pulp. It is also used widely in bakery industry in making smooth and fluffy bread.

Protease breaks the peptide bond present in the proteins and converts the protein into smaller polypeptide or amino acids. Proteases are the key ingredients of all kinds of detergent availablein the market. Apart from that, proteases are widely used in pharmaceutical, waste treatment, food & beverage, leather & wool, etc.

Cellulose is the most abundant natural polymer on earth and cellulase hydrolyses this cellulose. Cellulase converts insoluble cellulose into soluble sugars. Cellulase is extensively used in textile, paper & pulp, detergent, food and leather industry. In India, cellulase is used mostly in textile industry from desizing process and in paper industry in modification of fiber properties. While, studies are being conducted around the world for producing biofuel by the help of cellulase enzyme.
