Formation

The concentration of anthocyanins, the pigment that determines the color of natural edibles, is the main reason behind black wheat. While the regular wheat has a 5 ppm concentration of anthocyanin, black wheat reportedly has 100-200ppm of anthocyanin which makes this a healthier option, as per scientific reports. As Anthocyanins occur naturally and develop in the field during grain filling, the wheat is enriched with lots of nutritional value.
