We are offering automatic fermenter.the agriflex automatic fermenter works in three functional stages: mixing: the mother yeast is renewed by adding hot water and flour in the following ratio: mother yeast 20% water 40% flour 40% the timed electric mixers blend the mix of water, flour and mother yeast for roughly 15 minutes fermentation: once the 15 minutes of mixing are over, then starts the fermentation phase, its duration being in relation to the working cycle chosen by the operator among the following options: - ph mode - ph with heating mode - time mode the ph is monitored continuously by a probe that constantly measures the acidity of the dough, providing information on the activity of yeasts and bacteria. During the fermentation phase, a series of organic acids are released, including the main component which is lactic acid.

Attentive to customers needs, dynamic and committed to improving production processes since ever, agriflex is now focusing on flour temperature control in the dough mixing room, which is crucial to ensure constant and optimum quality, both in industrial and small scale production of baked goods. The flour cooling system fine tuned by agriflex is unique and innovative, as it allows to decrease flour temperature up to 20 c, ensuring a constant and uniform temperature, and eliminating the disadvantages of the methods used so far. One of the most common and widespread methods currently used to lower dough temperature is adding ice directly in the mixer. There is however a limit to it, namely the empirical way, often depending on the skill of the operator at work, in which the following is calculated: the amount of ice to add, based on the temperatures measured, and the reduced amount of water to add to the dough, as part of it comes from ice melting. Moreover, the low percentage of water in the dough during the initial phase (to be later integrated with the addition of ice), makes it especially dry and may even cause premature wear of the mixer and excessive stress on mechanical parts. Another method used for dough cooling is injecting liquid nitrogen and carbon dioxide. Beside the high costs making these systems not very common, liquid nitrogen and carbon dioxide enter in contact with the dough, causing a modification in the organoleptic properties of the raw materials and the death of yeasts, as well as uneven cooling, as the surface of dough is mostly cooled down. Moreover, as this method does not take into account a number of affecting factors such as flour temperature at silo outlet, the exposure of dough to liquid nitrogen and carbon dioxide does not ensure any feedback by the operator.

The units have a capacity of 100 lt, usually enough to store 50 kg of improver (depending on its specific weight). under the units a transferring hopper moves the micro-blend to the dosing hopper, installed on top of the mixers. The transferring hopper is provided with a precision weighing system. the system includes also: 1 hopper for product loading 2 pneumatic loading group into the 3 units 3 completely scaled system and sensors in order to monitor exact doses 4 complete automation with touch screen the system is complying to the european atex laws for the prevention of powder explosion. units and pneumatic transport handling abrasive product (salt) are built in stainless steel aisi 316. This microdosing system has been conceived in a way to allow a two phase process to carry out 15 batches per hour, as requested. In order to reach this dosing result, under the 6 microdosing units has been placed an intermediate weighed hopper. Under the indermediate hopper has been dimensioned a transferring scaled hopper. how it works the system is dimensioned so that while the 6 units are loaded with product and discharge into the scaled intermediate hopper, the underlying transferring hopper can transport the dosed product into the mixer bowl. this two-phase process allows simultaneous dosing and transferring, reducing by half the amount of time needed for reaching the mixer bowl. the system includes also: 1 hopper for product loading 2 pneumatic loading group into the 6 units 3 completely scaled system in order to monitor exact doses 4 complete automation with touch screen 5 final dosing hopper into the mixer bowl
