Tomato paste is obtained by concentrating pure tamatojuice after the seeds and skin have been removed out of sound, ripe tomato .the juice is passed through a 0.7mm sieve and concentrated by evaporation of waterfrom juice under vaccum . this ensures that the original color , flavor and nutritive value is retained .some of the used of this paste is as follows.
Oblong with prominent beak in shape, about 6-8 inches long, the Totapur; Mango has a rich aromatic flavor with sweetness and acidity in a delicate blend. The fruit pulp ranges from pale to bright yellow with a large central seed. lt is a rich source of Vitamin A and C.

Totapuri Mango is one of the familiar varieties in India. This variety is particularly available in South Indian states viz. Andhra Pradesh, Tamilnadu and Karnataka. This variety is normally large in size and its colour is golden yellow. It is oblong in shape and has a prominent beak-like pointed end. These mangoes vary in length but in an average the length of the fruit will be about 7 inches long. The skin of this variety is normally thick.
Totapuri pulp concentrate is obtained by evaporating water from mango pulp under vacuum. Some of the uses of this pulp is as follow.
