Coriander also commonly called cilantro in North America. The fresh leaves and the dried seeds are the most commonly used in cooking. Dried coriander seeds are warm, nutty, spicy, and orange-flavored.
Cloves can be used in cooking either whole or in a ground form, but as they are extremely strong, they are used sparingly. It is normally added whole to enhance the presentation and flavor of the rice. It is also used in most Indian meat preparations.
