It is a Polysaccharide Consisting mainly of D - mannose and D- galactose units. The powder is odorless and appears creamish in color. It has a high capacity of water absorption and can retain a stable viscosity over a broad PH range. Tamarind gum powder contains a Galactossglucan polysaccharide (55 65)% Protein (18 20)% , Lipids (6 10)% Fiber and sugar etc. It forms uniform solution on heating with water while stirring in cooking pan.
