Yoghurt is taken as short of set curd alike to dahi. Precautions: Starter culture of dahi must be free from undesirable and harmful bacteria Procedure: Take one or two liters of milk in the pan Boil the milk for 5 to 10 minutes Cool the milk to body/room temperature (35 0 C) Inoculate the milk with mixed culture or previous days mild acidic curd at the rate of 0.5 to 1 percent Mix the milk thoroughly Fill the milk in plastic cups Incubate the cups or container at a temperature of 30-35 0 C for 2 to 4 hrs. (Acidity to reach about 0.7 to 1 percent) After incubation the cups or the containers are removed from the incubator and stored at low temperature to check further fermentation reactions
