Raw Brown Cane Sugar or ICUMSA 800-1200 VHP is a brown sugar prepared from the first crystallization of the sugar cane. Raw Brown Cane Sugar is coarser than the normal white sugar and is brownish in color. Based upon weight the unrefined brown sugar from sugar cane, when fully refined, yields about 70% of white sugar. There are more molasses in natural brown sugar that provides higher mineral content. The manufacturers partially refine the raw sugar so as to remove the impurities and sell them as “demerera, ” ”turbinado, ” or “muscavado” sugar.
