In the Oil Lecithine Drying unit, the recovering of fatty acids and other volatile matters are done. The deoderizor is also equipped with a vapor scrubber to minimize the pollution load. The system is designed to prevent the entry of volatile matters enter the deodorizer. There are varieties of products produced from soy processing; lecithine is also one of the important constituents along with others, which get extracted along with oil during extraction process. These are the phospholipids (gums) having phosphorus with nitrogen (amine group), in glyceride chain in place of one of the fatty acid group. Soy lecithin is edible used in various confectionaries, bakery products and pharmaceutical industry for coatings. This is a very good emulsifier used in making of margarines. If extracted oil water de-gummed early and the hydrated gums dried immediately then the quality of lecithin produced becomes good, that is lighter in color and less in acid value and peroxides too. So, its necessary have wet lecithine drying along with de-gumming plant. Capacity of lecithin drying plant is depending on the de-gumming unit capacity.
