Cumin(/kjumn/[2][3]orUS:/kumn/, [2][4][5][6]or/kmn/[2][3]) (Cuminum cyminum) is aflowering plantin thefamilyApiaceae, native to theIrano-Turanian Region.[7]Its seeds each one contained within a fruit, which is dried are used in thecuisinesof many cultures in both whole and ground form. Although cumin is used intraditional medicine, there is no high-quality evidence that it is safe or effective as atherapeutic agent.[8]
The term comes viaMiddle EnglishandOld Frenchfrom the Latin termcuminum. This in turn comes from theAncient Greek(kminon), aSemiticborrowing related toHebrew(kammn) andArabic(kammun). All of these ultimately derive fromAkkadian(kamnu).[9][10]
Cumin is the dried seed of the herbCuminum cyminum, a member of theparsley family. The cumin plant grows to 3050cm (1220in) tall and is harvested by hand. It is anannualherbaceous plant, with a slender, glabrous, branchedstemthat is 2030cm (812in) tall and has a diameter of 35cm (1+142in).[11]Each branch has two to three sub-branches. All the branches attain the same height, so the plant has a uniform canopy.[11]The stem is colored grey or dark green. Theleavesare 510cm (24in) long, pinnateorbipinnate, with thread-like leaflets. Theflowersare small, white or pink, and borne inumbels. Each umbel has five to seven umbellets.[11]Thefruitis a lateral fusiform orovoidachene45mm (1615in) long, containing two mericarps with a singleseed.[11]Cumin seeds have eight ridges with oil canals.[11]They resemblecarawayseeds, being oblong in shape, longitudinally ridged, and yellow-brown in color, like other members of the family Apiaceae (Umbelliferae) such as caraway, parsley, anddill.[12]
Cumin is sometimes confused withcaraway(Carum carvi), another spice in the parsley family (Apiaceae). Many European languages do not distinguish clearly between the two. ManySlavicandUralic languagesrefer to cumin as "Romancaraway" or "spice caraway". The distantly relatedBunium persicumandBunium bulbocastanumand the unrelatedNigella sativaare both sometimes called black cumin (q.v.).[1
