Dhoka is a diamond-shaped fried snack item made from Bengal gram. First Bengal gram is soaked and ground coarsely with various spices such as salt, sugar, and green chilies. Then the mixture is dry roasted with some other ingredients, such as ginger paste, grated coconut, maida, hing, and vegetable oil. After dry roasting, the mixture is cooled and cut into diamond-shaped pieces. The fried diamond-shaped pieces are dhokas. Dhoka is a popular Bengali food item enjoyed as a snack with tea or can be used to prepare Dhokar dolna, a delicious Bengali curry.
