Cucumber

The cucumber is a creeping vine that roots in the ground and grows up trellises or other supporting frames, wrapping around ribbing with thin, spiraling tendrils. The plant has large leaves that form a canopy over the fruit. The cucumber is roughly cylindrical, elongated with tapered ends, and may be as large as 60 cm long and 10 cm in diameter. Cucumbers are grown to be eaten fresh (called slicers). Those intended for pickling (called picklers) have a similar appearance. Cucumbers are mainly eaten in the unripe green form. The ripe yellow form normally becomes too bitter and sour. Cucumbers are usually more than 90% water.

Ginger

Ginger (Zingiber officinale L.) is an important commercial crop belonging to the family Zingiberaceae grown for its aromatic rhizomes which are used both as spice and medicine. It is an old age crop of Asia and believed to have originated from South East Asia. It is cultivated in almost all the tropical and subtropical parts of India, especially in Sikkim, Kerala, Karnataka, Tamil Nadu, West Bengal, Bihar, Himachal Pradesh, Uttar Pradesh and Maharashtra. Ginger is also cultivated in Jamaica, Nigeria, Sierra Leone, Brazil, China, Japan and Indonesia. India is the largest producer and exporter of ginger, it accounts for more than 70% of world production. About one-third of quantity is exported mainly to the Middle East. They may be also use in Ginger Oil, Ginger Oleoresin, Ginger Candy, Ginger Soft Drink (RTS), Ginger Shreds, Ginger Pickle and Ginger Chutney.
