Desiccated coconut is produced from white meat of matured coconut fruit. Age of matured coconut is 11-12 months. Matured coconut is de-husked, de-shelled and taken brown skin. Then Coconut meat is blanched in hot water in 5 minutes before disintegrating. Disintegrated Coconut should be pasteurized by water steam to bring down microbiological before it is sent to Fluid Belt Dryer. It also comes in two variations such as low fat (maximum 40% fat) and high fat (minimum 63% fat).
