Brown sugaris asucrosesugar product with a distinctive brown color due to the presence ofmolasses. It is either an unrefined or partially refined soft sugar consisting of sugarcrystalswith some residual molasses content (natural brown sugar), or it is produced by the addition of molasses to refinedwhite sugar(commercial brown sugar).
TheCodex Alimentariusrequires brown sugar to contain at least 88% of sucrose plusinvert sugar.Commercial brown sugar contains from 4.5% molasses (light brown sugar) to 6.5% molasses (dark brown sugar) based on totalvolume. Based on total weight, regular commercial brown sugarcontains up to 10% molasses.The product is naturally moist from thehygroscopicnature of the molasses and is often labelled as "soft." The product may undergo processing to give a product that flows better for industrial handling. The addition of dyes and/or other chemicals may be permitted in some areas or for industrial products.
Sugaris the generalized name for sweet, short-chain, solublecarbohydrates, many of which are used in food. They are composed of carbon, hydrogen, and oxygen. There are various types of sugar derived from different sources. Simple sugars are calledmonosaccharidesand includeglucose(also known as dextrose), fructose, andgalactose. The table or granulated sugar most customarily used as food issucrose, adisaccharide. (In the body, sucrose hydrolyses into fructose and glucose.) Other disaccharides includemaltoseandlactose. Longer chains of sugars are calledoligosaccharides. Chemically-different substances may also have a sweet taste, but are not classified as sugars. Some are used aslower-caloriefood substitutes for sugar described asartificial sweeteners.
