You can use turbinado sugar interchangeably in most recipes that call for brown sugar. If accurate measurements are called for, do not replace granulated white sugar with Turbinado sugar, as it will tend to add additional moisture to the final product. Points of Interest Turbinado sugar, sometimes referred to as cane sugar or raw sugar, is made from the first pressing of sugar cane. It comes from the sugar cane juice, which is evaporated, crystallized, and spun in a turbine (hence the name). The result is a coarse, golden crystal that retains some of the flavour of molasses, which is a natural byproduct of the sugar process. Since turbinado sugar is not as refined as granulated white sugar, it is often considered healthier. It also contains fewer calories than white sugar because of its higher moisture content. Turbinado sugar resembles brown sugar, but is slightly paler with larger crystals. The two can often be interchanged in recipes with great results. Other Turbinado style sugar contains about the same amount of sucrose as refined white sugar. However a portion of the natural molasses in raw sugar remains, up to 10%, giving a distinctive flavour and blond colour. Turbinado style sugar with its free flowing characteristic can be used as a direct substitute for white sugar in baking, general cooking and beverage sweetening.
