Precaution: Urad is considered to have a "cooling" constitution (*sheetal prakriti*) and can be *Vata*-aggravating; therefore, it is considered advisable to cook it with asafoetida (*hing*) and clarified butter (*ghee*). Various Names for Urad: Known as *Urad* in Hindi, *Kalai* in Bengali, *Adad* in Gujarati, *Urid* in Marathi, and *Maah* in Punjabi.
