Dairy whitener is prepared by spray drying of cow/buffalo milk or a mixture thereof. The liquid is removed from the milk and a certain quantity of sugar is added so that it can be readily used for tea or coffee making. Normally dairy whiteners contain around 20 per cent added sugars.
Dairy whitener is widely used as a substitute for fresh milk, cream or evaporated milk in tea, coffee, cocoa or drinking chocolates and is also suitable for adding to foods like soups, sauces, puddings and cereal dishes.
Dairy whitener possesses good whitening ability, high dispensability, feathering and emulsion stability. It remains stable in tea / coffee with better mouth feel without leaving any undissolved suspended particles.
