Dehydrated onions are prepared by a special process in which moisture is extracted and preserved. When they come in contact with moisture they rehydrate and resemble fresh onions. They have a very long shelf life which is about 10-15 years when unopened. Dehydrated onions are used in either separately or in the preparation of soups and pastas.
