The dual stage PHE utilizes ambient water (30°C) in the first stage to cool the wort from 95°C to 40°C and ice water of (5°C) in the second stage to drop the wort temperature to 12°C to 20°C. The water used in this process is transformed to 85°C hot water which can be stored in a tank for use in the Mashing process.

These tanks are designed with a dish bottom and is equipped with dimple jacketed glycol cooling system and insulated with 50-60 mm poly urethane foam. Tanks are fitted with high quality solenoid valves that regulate tank temperature. The cooling surface includes the cone and the bottom dish area. All tanks are fitted with high quality RTD sensors for accurate temperature indications and pressure gauges. Tanks are pressure tested to 3.0 bar and are fitted with a safety pressure valve set at 2.5 bar. Single or dual CIP spay balls are fitted for CIP operation. Overhead cross arm extending to the side is provided with a pressure regulating device. Arrangements for applying counter pressure of Carbon Dioxide is provided in the cross arm assembly. Tanks are equipped with sampling outlets, python line outlet and inlets for carbonation. Optionally flow meters, level tubing and kegging outlets can be provided. For brewing process we require more hot water and cold water at particular temperature, so we need hot liquor tank andcold liquor tank. Usage of mash is for releasing the sugar and then later we use sparge water to rinse of the sugar. This when comes in to the hot liquor tank it will eventually becomes . Granule brewers in go forward will use hot liquor tank to strike and spurge water. The simple job that takes places in this is brewing water is heated to mash the hotness.
