Also known as akkawi, akawi cheese is a white brine cheese much loved throughout the Levant and Cyprus.   Made with cow milk and sometimes with sheep or goat milk, this soft cheese boasts a smooth texture and a mildly salty taste which makes it delicious in Oriental sweets.
