    Mustard DOC is the protein-rich byproduct left after extracting oil from mustard seeds (typically black mustard Brassica nigra, Indian mustard B. juncea, or white mustard S. alba) via cold pressing or expeller methods. It commonly contains about 30–40% crude protein depending on the mustard variety.
