canola oil comes from canola seed. The oil is pressed from a tiny brownish seed coming from the canola plant.
the name canola had its origin from canada where rapeseed was naturally bred to canola in the early 1970's. Canola, however, is not rapeseed their nutritional profiles are very different. Traditional plant breeding methods was used in the 1960's to get rid of rapeseed's undesirable qualities – erucic acid and glucosinolates. Canola oil has less than 2% euric acid in its oil and less than 30 mol/g glucosinolate in the oilcake. Compared to rapeseed, canola seed contains a reduced content of erucic acid and glucosinolates.

low in saturated fat: saturated fat raises the bad ldl cholesterol in your blood and has been linked to increased risk of coronary heart disease.
high in monounsaturated fat: monounsaturated fat may reduce the risk of coronary heart disease by lowering bad ldl cholesterol in the blood and helping control blood glucose.
