Chicken masala is a popular gravy based dish that is found in almost all parts of the Indian subcontinent. Several dry spices are dry roasted, finely ground and sautéed along with an onion and tomato puree. Chicken pieces, either boneless or whole, are then added while the gravy thickens. Depending on the region, several other ingredients including butter, cream, coconut cream or powdered cashew nuts are further added to enhance the taste. The flavor however, depends on the freshness and quality of the spice mixture.
