Asafoetida (hing)

Preparation Steps:
Slit the Chilies:Make a small slit in each green chili.
Prepare the Marinade:Mix sour buttermilk with salt, asafoetida, and roasted fenugreek powder.
Marinate the Chilies:Soak the slit chilies in the buttermilk mixture overnight.
Sun-Dry:Drain the buttermilk and spread the chilies on a tray.Dry them under the sun for several hours over 3–4 days until they are completely dried and crisp.
