We process the fresh cheese, which is liked by nearly all indians and used in diverse vegetarian dishes, which adds to their taste and presentation. It is assumed that paneer was brought by persians in northern india, but no substantial piece of information has been produced to corroborate this fact, till date. Our fresh cheese is a rich source of protein, and thus liked by all. In some parts of eastern india, the fresh cheese or paneer is also known by the name channa. types there are generally two types of paneer

• soft paneer, which is popular and used in different cuisines
• hard paneer, which is mostly used by bengalis.
