Raw Pineapple is an excellent source of mangenese and Vitamin C, Mainly from it stem, pineapple contains a proteolytics enzyme bromelain, which breaks down protein. Pineapple is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Thiamin, Vitamin B6 and Copper.
Storage
Unripe pineapple can be ripened at room temperature. They are chill-sensitive and storage at a temperature of 40oF (4.5oC) and lower will causes chilling injury and breakdown in pineapple.
