High Maltose syrup is used as sweetener in various food products. The sugar profile of high maltose syrup comprises of Maltose as a major component. High maltose syrup is less sweet then high fructose syrup and contains no fructose. It has adequate sweetness and is used as a sweetener in commercial production of food products. To be labelled as High maltose, the syrup must contain minimum of 50 % maltose.

High Maltose syrup replaces glucose syrup in various applications due to its unique functional properties. It’s low humectancy helps hard candy for not being sticky even in the rainy season. Having low freezing point, Maltose is also preferred sweetener for frozen desserts. Because of balanced fermentability, Maltose is also used in brewing. High maltose syrup also preserves food by inhibiting bacterial growth.
