Hydroxytyrosol is an active ingredient in olives that acts as a highly active antioxidant in the human body. Antioxidants are bioactive molecules found in many plants, but their activity varies. Hydroxytyrosol is considered one of the most powerful antioxidants and is in increasing demand. Its oxygen free radical absorbance capacity is approximately 4,500,000 μmolTE/100 g: 10 times that of green tea and more than twice that of CoQ10 and quercetin.
