Salt (especially sodium) is essential for good health, sodium intake will affect 20% of the population by increasing blood pressure which significantly increases the risk of heart attacks and stroke. We consume more than twice the amount of saltsodium we actually need. Although salt gets the blame to raised blood pressure, it is not the salt itself but the sodium part of sodium chloride, which makes up 99% of a grain of salt, that is causing the problem. So if we could reduce the sodium content of the salt, without reducing its ability to make the food taste better.
