Desi Ghee is a food every household in India has. Desi ghee can be made from cow milk, buffalo milk, sheep milk, goat milk, camel milk etc. But the purest form of cow ghee is meant to be made from A2 cow milk. A2 cow ghee is made from A2 cow milk.
Milk contains two major groups of protein- 1. Caseins and 2. Whey protein. A2 milk contains the A2 type of Beta-casein protein. A1 milk contains the A1 type of Beta-casein protein. Indian native cow breed which is also known as ‘Desi breed’ are a source of A2 milk type.
In India there are 40 certified indigenous breed cows, out of which few breeds have a good milking capacity. These few breeds are kankrej from North Gujarat, Gir from Saurashtra, Sahiwal and Red Sindhi from Punjab and Tharaparkar from Rajasthan are breeds having average milking capacity of 8-10 liters per day.
