PROPIONIC ACID is a colorless, pungent-smelling liquid with a variety of uses, including:
· Food preservative: Used to prevent the growth of bacteria and fungus in packaged foods and other products. It's also used to control fungi and bacteria in drinking water for livestock.
· Chemical intermediate: Used to produce esters, salts, and other derivatives for use in the plastics, coatings, agricultural chemicals, food, flavor, and perfume industries.
· Antifungal drug: Used as an antifungal drug.
· Component of smoke: A major constituent of the gas phase of the mainstream smoke of unfiltered .
· Component of baked goods: Detected as a volatile component of baked potatoes and cooked meats.
· Component of dairy products: Found in Swiss cheese because of the growth and metabolism of the genus Propionibacterium.
Propionic acid is a short-chain saturated fatty acid that comprises ethane attached to the carbon of a carboxy group. It's miscible with water and almost all normal organic solvents.
When handling propionic acid, you should:
· Wear personal protective equipment
· Ensure that the rooms where propionic acid is stored and handled are well ventilated
· In case of a small spill, neutralize with alkaline soap and water
· In case of a large spill, evacuate all personnel immediately
· Remove all sources of ignition and use foam to suppress the vapors
· Suppress the fire with dry fire extinguishing chemicals like carbon dioxide
