They can be ground down in a coffee grinder to make the base for hot chocolate or a powder that can be combined with cacao butter for raw chocolate making. The nibs allow you to obtain a freshly ground flavour for your cooking.
These cacao nibs are raw rather than roasted. They are still dry and crunchy, just like roasted nibs, and can be used in exactly the same types of recipe. However, raw nibs retain more of the original oils and natural flavonoids. The term "cacao nibs" tends to be used to refer to these raw cacao nibs, whereas "cocoa nibs" tend to be the roasted ones, but there are no strict definitions and, for all intents and purposes, they are the same thing.
