It is a white or light yellow crystalline powder, used as nutrition fortifier, antioxidant and preservative in food products such as in meat products, dairy products, and beverages. Sodium ascorbate is widely replaced by sodium erythorbate which has stronger antioxidant ability and will not bring acidic taste.
