Traditional Smoked Salmon

Spence & Co. starts with premium quality fresh Atlantic Salmon. We then dry brine by hand using only kosher salt and then delicately cold smoke over Oakwood chips. Trimmed to perfection, the brown meat and pelicule (a thin skin that forms on the outside during smoking) are removed exposing the delicate center of the salmon. Each slice is then hand interleaved for ease in separation. The most trimmed product on the market today, our flagship Traditional Scottish Style Smoked Salmon is second to none.
