Xanthan Gum, also named XC polymer, is a kind of extracellular acidic hetero-poly saccharide fermented by Xanthomonas. It is a macromolecule microbial polymer, made from carbohydrate, like corn starch, by microbe fermentation engineering cultivation, extraction, drying and grinding.
