It is more of a brown raw mass of sucrose that obtains its color from other elements present in a concentrated form including bagasse and wood ash. Jaggery is mainly consumed in Southeast Asia and Indian Sub-continent. More than 70 percent of the world’s jaggery production occurs in India.
