We have put down basic way of making ice cream in the below steps . the ice cream base with the right percentage of milk fat and its ingredients has to be chosen by the ice cream maker depending on his region .

1. Blend the Ice Cream Mixture
the ice cream make has to ensure the milk fat percentage , Sugar, cream andblend to ensure complete mixing of liquid and dry ingredients.
2.Pasteurize Mix
Ice cream mix is pasteurized at 155F (68.3C) for 30 minutes
3.Homogenize
Ice cream mix is homogenized (2500 to 3000 psi) to decrease the milk fat globule size to form a better emulsion
4. Age the Mix
Ice cream mix is aged at 40F (5C) for at least 4 hours or overnight
5. Add Liquid Flavors and ColorsLiquid flavors and colors may be added to the mix before freezing
6. FreezeIce cream Mix is frozen in continues freezer
7. Add Fruits, Nuts and FlavoringsAs desired, depending on the product.
8. Package
As desired, depending on the product.
9. HardenThe ice cream is cooled as quickly as possible down to a holding temperature of less than -13F(-25C).
