The scientific name of the carrom seed is Trachyspermum Ammi. Ajwain seeds are herbs also known as bishops weed. The seeds are related to caraway seeds and when roasted they release a complex aroma very similar to thyme, but giving a much more warming, dominant flavor. There is a very slight peppery, aniseed tone too. These are used in many dishes but are great when cooking fish and to fragrance a number of Indian bread.
This spice also has medicinal properties and is often used as a home remedy for relieving the feeling of being bloated. It is widely recommended for medicinal purposes like a calming herb to ease intestinal colic and treatment of diarrhea. Another main use has been increasing milk. In India, Gujarat is the leading producer of ajwain seeds in the world. Because of its taste, the demand for carom seed is increasing daily.
The major constituent of ajwain is an essential oil called thymol which constitutes about 35-60%. The seed also contains compounds like p-cymene, limonene, α-pinene, and γ-terpinene. Ajwain seeds also comprise protein, fat, fibre, minerals, calcium, iron, phosphorous, carotene, riboflavin, niacin, thiamin, and carbohydrates. For us Indians, carom seeds are a staple in flavoring virtually every lentil dish we make.
