Sesame Seed The Sesame is appropriately known as thequeen of oil seeds , as it is used for different purposes worldwide. The Sesame mainly is planted for its seed, its high level of oil and the protein in it. Composition : The Sesame seed has a 25% protein, a 50% oil content, a 20% sugar in it, a 6% fibre and also much various minerals. These seeds are rich in calcium (with about 0.3%) and also phosphorous content (in about 0.5%). The Sesame seeds contains low amount of lysine, however, it is still rich in other amino acids like cystine, methionine, leucine and arginine (Moazzami et al., 2006
