Carom Seeds (Ajwain) are very aromatic but less subtle in taste. Carom Seeds have slightly bitter, pungent, and strong flavor; even in trace amount, they dominate the taste of a dish. In India, Carom Seeds are never used raw, but they are either roasted or fried in ghee, which is done to develop a stronger and more prominent aroma.
