Here are some tips for drying carrots:
Blanch and cool
To stop the carrots from continuing to cook, immediately soak them in ice water or run them under cold water until they are no longer warm.
Arrange on trays
Place the blanched and cooled carrots on the dehydrator trays in a single layer, making sure they aren't touching.
Set the temperature
Set the dehydrator to 125°F or 135°F.
Monitor
Depending on the humidity and thickness of the slices, drying can take 6–12 hours. Vegetables can scorch near the end of the drying process, so monitor them more closely as they finish.
Store
Transfer the dried carrots to a food-grade, BPA-free plastic container or a large Mason jar. Cover tightly and store away from direct
light and heat.
