Kathal Ka Achar, ever heard of Jackfruit Pickle, sounds intriguing. Jackfruit is a tropical climacteric fruit, belonging to the Moraceae family, is native to Western Ghats of India and common in Asia, Africa, and some regions in South America.Picking a Jackfruit starts with peeling this large fruit and cutting it into large chunks. The pieces are then blanched and sun dried. Once ready each peice is massaged with spices, mustard oil, with the hint of vinegar and placed in the glass jar to mature. Natural preservation enhances the flavors and the longevity of the pickles
